Avocados, avocados, avocados. They have certainly become a part of our culture in the past few years and are loved by many. One of the best things to make with avocados is guacamole. There are some recipes out there that are complicated, not vegan friendly, and just plain gross. I found a great guac recipe that anyone can make. With these delicious organic and vegan friendly chips,Β you’ll impress everyone at your next party!

INGREDIENTS (6)

  • 1 1/4 pounds ripe avocados (about 3 medium), halved and pitted
  • 1 medium scallion, minced (white and light green parts only)
  • 1/2 medium jalapeΓ±o pepper, seeded and minced
  • 1 tablespoon finely chopped fresh cilantro
  • 1 tablespoon freshly squeezed lime juice, plus more as needed
  • 1 teaspoon kosher salt, plus more as needed

*Tip: When buying avocados look for ones that aren’t hard. If they give a little when squeezed it usually means they are the perfect ripeness. A ripe avocado should feel firm, not hard and never soft or mushy. You can also go by color. The darker the avocado the more ripe it is. There are some great apps that you can use to take a picture of an avocado before you buy it and it can tell by the color about how ripe it is.

INSTRUCTIONS

Scoop the flesh from the avocados into a medium bowl. Mash with the back of a large fork or a potato masher to make a chunky paste.

Add the remaining ingredients and stir to combine. Taste and season with additional lime juice and salt as needed. Serve immediately or place a sheet of plastic wrap directly on the surface of the guacamole and refrigerate for up to 2 hours. (The plastic wrap will keep the surface of the guacamole from turning brown.)
