Sweet potato millet patties deja vegan

One of the benefits of writing a blog is that I come across tons of healthy recipes. I'm allergic to Gluten so I mostly look for gluten-free meals! 

The snacks we carry on dejavegan are all gluten-free and healthy options! But I do recommend having a balanced diet and eating other stuff. 

My new favorite gluten-free vegan recipe I make at home is sweet potato millet patties with blackberry salsa. Chances are if you already eat a gluten-free, vegan diet you will already have a lot of the ingredients on hand. If not then they are all easily found at your local health food store or in the natural foods section of your grocery store. And of course on our website.

For the patties you will need:

  • 2 small sweet potatoes
  • 1 1/2 cup millet, cooked
  • 1/2 cup sunflower seeds
  • 2 tablespoons chia seeds
  • 1/4 cup sesame seeds
  • 1 tablespoon tahini
  • 2 tablespoons coriander seed, crushed
  • 1/2 lime, zest and juice
  • Salt and pepper, to taste
  • Canola oil, for frying

For the salsa you will have to have:

  • 7 ounces fresh blackberries, or 10 1/2 ounces frozen
  • 1 large handful fresh coriander, chopped
  • 1 large handful fresh basil, chopped
  • 1 red chili pepper, chopped, or 1/2 teaspoon dried chili
  • 1/2 lime, juice
  • 2 tablespoons olive oil

Preparing the salsa only requires two steps. First you will want to chop the blackberries and mix them with the coriander and basil. You will then want to add red chili peppers and season the salsa with lime juice and olive oil to taste.

To cook the patties you will preheat the oven to 400 degrees. Peel and chop the sweet potatoes, spreading them on a baking sheet and cooking for 30 minutes. Once they are finished cooking you will place them in a large bowl and mash them. A fork should work find for this. Mix the millet in with the sweet potatoes. Add the rest of the remaining ingredients as well. You will then form four patties. Place them in a frying pan over medium high heat with a little canola oil. Cook the patties on each side for 4-5 minutes. Top them with the blackberry salsa and you have an amazing and healthy dinner!
